Rock docs are having a moment these days, what with Nirvana getting its closeup and “EPiC: Elvis Presley in Concert” drawing raves and crowds. Now comes “Man on the Run,” sprinting into theaters and streaming for fans who don’t remember that Beatle Paul McCartney once reinvented himself.
